Darci's Story

After trying several different combinations, I have finally created the best blueberry coffee cake recipe ever. This cake is so moist, with tidbits of sweet crunch from the streusel, and a layer of gooey blueberry goodness. You can bake this recipe in a cake pan, a loaf pan, or in a muffin pan (cooking time will vary).
TIPS: I use a loaf pan. Fresh blueberries can be used as well. It will seem like the batter is not enough, but it will bake perfectly. Also, if the batter is a little thick, just add a little more milk. I am sure this recipe will also work with other flavor berries.

Made this for a volunteer group meeting and it was a hit! Made a double batch and it was perfect for six people. (Everyone had seconds.)

I made the first batch in a round glass pie dish, and the second in a small square glass dish. Both worked well, but the round pie dish made six beautiful wedges to serve on everyone's plate. (Very pretty!)

Next time, I'm going to serve it with a lemon glaze dribble, or some whipped cream for a pretty finish.

This is a really good blueberry coffeecake recipe!

Cheryl, I made this just last weekend for a group of 5 friends. They all loved it and asked me for the recipe. I made one for my house as well, my husband and I loved it also! In fact, my husband was quite surprised when I read your message to him.

I got together for a Sunday Brunch with 5 of my girlfriends today. I brought your cake Darci! Needless to day it was a big hit! We heated it up a bit and everyone put some butter on it. Delicious and nice and moist! I cooked it in our convection oven! I followed your recipe to the letter (except used fresh blueberries). I didn't add milk to the thick batter. It came out just delicious! A hit with all, they wanted the recipe!
