I was taught this recipe when I was about 13 years old. My mom had a bunch of over ripe bananas. I never forgot it,and I hope you enjoy it.

Ingredients

PREPARE YOUR FAVORITE PANCAKE DOUGH

MIX JUST TIL MOISTENED......... DO NOT OVER MIX......ADD

1 tsp
cardamom
1 tsp
cinnamon
2 tsp
vanilla extract
1 Tbsp
baking powder
2 Tbsp
sugar

BETTER SHOULD BE THICK, IF NOT ADD FLOUR OR MORE PANCAKE MIX

2 slice
bananas over ripe
1 1/2 c
canola oil for frying

Directions Step-By-Step

Bring frying oil to 360F (temp. for deep frying)

After mixing together your pancake batter....

Add the cardamon, cinnamon, vanilla, baking powder, and sugar

Mix together till moisten

submerge each slice of bannana in pancake mix (one at a time )

Pick up with skewer

carfully place in frying oil

* as soon as banana hit the oil ( turn over to other side) ... this ensures even cooking on both sides. Aprox. 2 min. on each side.

drain on paper towel

Cover each ball with coating of choice
