I was taught this recipe when I was about 13 years old. My mom had a bunch of over ripe bananas. I never forgot it,and I hope you enjoy it.

Ingredients

PREPARE YOUR FAVORITE PANCAKE DOUGH

MIX JUST TIL MOISTENED......... DO NOT OVER MIX......ADD

1 tsp
cardamom
1 tsp
cinnamon
2 tsp
vanilla extract
1 Tbsp
baking powder
2 Tbsp
sugar

BETTER SHOULD BE THICK, IF NOT ADD FLOUR OR MORE PANCAKE MIX

2 slice
bananas over ripe
1 1/2 c
canola oil for frying

Step-By-Step

1Bring frying oil to 360F (temp. for deep frying)
2After mixing together your pancake batter....
3Add the cardamon, cinnamon, vanilla, baking powder, and sugar
4Mix together till moisten
5submerge each slice of bannana in pancake mix (one at a time )
6Pick up with skewer
7carfully place in frying oil

* as soon as banana hit the oil ( turn over to other side) ... this ensures even cooking on both sides. Aprox. 2 min. on each side.
8drain on paper towel
9Cover each ball with coating of choice
