Banana Cupcakes with Creamy Cream Cheese Frosting

I made these cupcakes for a gallery show that I was in for my art. I made a bunch of desserts and this was one of them. Unfortunately when taking a picture my camera's battery ran out and I didn't have my charger with me. So I am using a standard banana cake recipe pic. This is how I set up my banana cupcakes. I hope you enjoy the recipe as much as I do. I love banana cupcakes.

Ingredients

CUPCAKES

1 3/4 c
all purpose flour
1 tsp
baking powder
1/4 tsp
salt
1/2 c
unsalted butter, room temperature
3/4 c
sugar
1-2
large ripe banana
2
eggs, room temperature
1 tsp
pure vanilla extract
1/2 c
whole milk

FROSTING

1/2 c
butter, room temperature
8 oz
cream cheese, room temperature
1 tsp
pure vanilla extract
1 lb
powdered sugar
yellow food coloring to tint frosting (optional)
caramel ice cream topping for drizzling (optional)

Step-By-Step

1Preheat oven to 350 degrees and line cupcake tray with 12 baking cups.
2Sift together flour, baking powder and salt in a medium bowl with a wire whisk.
3Cream butter and sugar in a mixer for about four minutes. Also add in the eggs and vanilla. Add banana and mix until combined.
4Add half the flour in three additions alternating with milk in two additions. Scrape down the sides with each addition.
5Bake for about 12-15 minutes or until done. Cool completely before frosting.
6FOR FROSTING: Cream butter and cream cheese in mixer until thoroughly combined. Add vanilla. Then Add sugar in small batches until combined and creamy. Add a small amount of yellow food coloring to frosting and mix.
7Top off each cupcake with a slice of banana. For an addition, drizzle caramel ice cream topping on each cupcake, (optional).
