My husband, Ray,loves black walnuts especially black walnut cake. I am not very fond of black walnuts but I love coconut. So I put together a recipe that has black walnuts and coconut. We both really like this cake. Hope you will too!!
Grease and flour a 10-inch tube pan and set aside.
Cream together margarine, butter, cream cheese and sugar. Add eggs one at a time until very creamy. Add dry ingredients and flavorings and mix well. Fold in coconut and black walnuts. Pour into tube pan and bake at 325 degrees for 1 hour and 15 minutes.
TOPPING-Cream together 3-oz. cream cheese and 1 tablespoon of butter. Add 1/2 teaspoon black walnut flavoring and 1/4 teaspoon vanilla flavoring. Then add 1/2 box confectioners sugar with enough milk to make the consistency of a thick sauce. Stir in 1/3 cup finely chopped black walnuts. Spread on top of warm cake and let it drip down the side. Note: keep spreading on the top until all is on the cake. Top with toasted coconut. Store in refrigerator until ready to serve. When ready to serve you can microwave each slice and top with a scoop of vanilla ice cream. It's also great plain.
