Ingredients

THE FOLLOWING RECIPE IS FOR A
REGULAR SMALL CAKE..I DOUBLE MINE
FOR BIGGER PARTIES (CAKE IN PHOTO
ABOVE IS DOUBLED, LARGER PAN THAN
JUST A 9X13")
2 c flour
2 c sugar
1 c shortening (crisco lard, plain or butter flavored)
1 c water
1 stick butter
4 Tbsp cocoa powder
1/2 c buttermilk
1 tsp of a good vanilla
1 tsp baking soda (stir into flour)
3 medium eggs
1 Tbsp cinnamon if you like (optional)
LAURA'S 7 MINUTE FROSTING: (CAN
ALSO BE DOUBLED FOR LARGER CAKE)
1 stick butter
1 Tbsp of a good vanilla
6 or 7 Tbsp milk
4 Tbsp cocoa powder
1 lb powered sugar (16oz)
1/2 c coconut flakes
1 c chopped pecans

This recipe was sent to me by one of my cousins from TX. and she gave me permission to post it here.
She said it is her "87" yr old Aunt Laura's recipe.

Special Note from her:
The step where you boil the shortening, butter & cocoa together is very important...really makes all the difference!
If you just cream the ingredients together & then add the dry ingredients...it doesn't taste the same (not nearly as good)!

The photo is Peggy's when she made this recipe for a B-Day cake....she doubled the recipe...I posted 'half' .

Yum, yum, yum! It's no wonder this recipe often gets doubled... more is definitely more! This a terrific, classic recipe that every chocolate loving home cook should try.

 

Directions

Preheat oven to 350°F

Bring the 1 cup shortening, 1 stick butter, 1 cup water and 4 T cocoa to boil in a large saucepan..stir frequently.

Pour over the flour (stir baking soda into flour) , cinnamon (if using) & sugar... stir in the buttermilk, beat the eggs with the vanilla and add to flour mixture.

Stir well... pour into greased and floured 9X13" cake pan (or jellyroll pan for a sheetcake if doubling recipe)...bake in preheated 350°F oven for 30 minutes or until done.

While the cake is still warm... start making the Yummy frosting.

Heat butter, cocoa & milk... add the powered sugar and vanilla... stir well... then add the coconut flakes & pecans.

Stir together well...then pour over the cake while it is still warm.
