applesauce spice cake with peanut butter frosting

This cake was always my birthday request. My grandmother even mailed me one in college, and it lasted about 5 minutes in the student center. I made it easier using a spice cake mix, but it tastes just like Grandma and Dad used to make! If you're baking at a higher altitude, add 1/2 cup of all-purpose flour to the cake mix.

Ingredients

  • APPLESAUCE SPICE CAKE
  • 1 box spiced cake mix
  • 1 package vanilla instant pudding (3.4 oz)
  • 3 large egg
  • 1 1/4 cups applesauce
  • 1/3 cup oil
  • 1 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)
  • PEANUT BUTTER FROSTING
  • 1/2 cup butter, softened
  • 1 cup smooth peanut butter
  • 2 cups powdered sugar
  • 3 - 4 tablespoons milk (more or less as needed)

How To Make applesauce spice cake with peanut butter frosting

  • Step 1
    Preheat oven to 350 degrees F. Grease and flour a 13x9-inch pan.
  • Step 2
    Combine cake mix, pudding mix, eggs, applesauce, and oil in a large bowl. Beat at medium speed with an electric mixer for 2 minutes. Stir in nuts (and raisins if using).
  • Step 3
    Pour into the prepared pan.
  • Step 4
    Bake at 350 degrees F for 40 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 15 minutes. Invert onto a cooling rack. Turn right-side up. Cool completely.
  • Step 5
    For the peanut butter frosting, place the butter and peanut butter in a medium bowl, and beat with an electric mixer.
  • Step 6
    Gradually mix in the sugar. When it starts to get thick, incorporate milk one tablespoon at a time until all of the sugar is mixed in and the frosting is thick, fluffy, and spreadable. Beat for at least 3 minutes for it to get good and fluffy.
  • Step 7
    Spread on cooled cake. I also sprinkle chopped peanuts on top sometimes for added texture.
