Apple Spice Cake

I enjoy having people drop by for coffee and dessert and I usually have something made or in the freezer. Not long ago I found myself with nothing in the freezer and friends stopping by.
I found a Spice cake mix in the pantry, a couple apples in the fridge and problem solved.

spice cake mix
2 large
1 c
confectioner sugar
sundae nuts in syrup * optional

Directions Step-By-Step

Mix cake as directed on the box.
Peel, core and chop 1 1/2 of the apples and add to the cake mix.
Grease and flour a Fluted Bundt Pan.
Bake at 350 for 40 to 45 minutes.
Remove from oven cool for 5 minutes, remove from pan and cool on wire rack.
While cake is cooling cut the the last half of the apple into smaller pieces, mix with cinnamon and sugar until coated. In a small pan melt 1 1/2 TBS. of butter, on low heat cook apples until tender.

Spoon apples in the butter and sugar mixture over the top of the cake. Top with aa Glaze made with Milk and confectioners sugar. Add Nuts if desired.

If you want an extra treat, top with a scoop of vanilla ice cream.
