Apple Cake

I had got this recipe from an old classmates mother when I was in 8th grade many moons ago. She was such a lovely woman. I think of her often when I make this.
This cake is so moist that you don't have to frost.

Ingredients

eggs
2 c
sugar
1 tsp
vanilla extract
2 c
flour
2 tsp
baking soda
1/8 tsp
salt
2 tsp
cinnamon
1/2 c
oil
1 c
chopped, walnuts
6 c
apples, peeled and chopped

CREAM CHEESE FROSTING

1 1/2 can(s)
powdered sugar
6 oz
cream cheese, softened
3 Tbsp
butter
1/2 tsp
vanilla extract
1 pinch
salt

Directions Step-By-Step

Beat eggs; add sugar and cdeam well. Add vanilla.

Sift together flour, baking soda, salt and cinnamon. Add alternately, with flour.

Stir in apples and nuts. Pour mixture into 15x9x21/2 inch pan which has been greased and floured. Bake 1 hour in a 350 degrees oven. Cool before frosting.

Frosting:

Cream together all of the frosting ingredients. Frost cake and top with finely chopped walnut, if you like.
