I saved this recipe about a year ago, from Allrecipes. I never got around to trying it or sharing it. So, I didn't want another year to go by, without doing so.

Ingredients

********TOPPING********

1 c
packed brown sugar
1 tsp
ground cinnamon
1/2 tsp
nutmeg
1/2 c
chopped pecans

********CAKE********

2 c
all-purpose flour
1 tsp
baking powder
1 tsp
baking soda
1/2 tsp
salt
1/2 c
butter, softened
1 c
white sugar
3/4 c
apple butter
1 tsp
vanilla extract
1/2 c
whole bran cereal or wheat germ
1 c
sour cream
2 large
eggs, beaten

Step-By-Step

1Preheat oven to 350°F. Spray or grease a 9x13 inch cake pan. Prepare topping mix, by combining those ingredients, and set aside.

2Sift together first 4 "cake" ingredients, in a medium bowl. In another bowl, blend together butter and sugar; add eggs, and beat well. Add apple butter, vanilla, whole bran cereal or wheat germ.

3Add sifted dry ingredients, alternately, with sour cream, to egg mixture; mix well, after each addition.

4Pour half of batter, into pan, sprinkle half of topping over top. Pour remaining batter, and top with remaining topping.

5Bake for 40 minutes or test with wooden pick, in center, for doneness. Makes 18 servings.

Nutrition: One serving 266 cal, 10.7 g fat (5.3 g sat), 43 mg chol, 224 mg sod, 88 mg potassium, 40.6 g carb, 1.1 g fiber, 3 g protein, 27.5 sugars.
