Aphrodite's Vanilla Cake with Dragon Fruit Compote

I took a milder approach to creating a dump cake. I exchanged out canned fruit pie filling for frozen mango chucks and box of vanilla cake mix. I also mixed the defrosted mango chucks in the dry cake mix first instead of plain just dump-it-in - the - pan, don't- stir-it approach. Then I dumped it in the cake pan, dotted it with butter and baked it.

16 1/2 oz
box of vanilla cake mix
1 medium
dragon fruit
3 tsp
fresh lime juice
1 tsp
1 1/2 Tbsp
chunks of fresh mango, papya or other fruit, if desired, for serving

Directions Step-By-Step

Prepare and bake the cake according to the directions on the package.
While the cake is cooling, prepare the compote. Remove the flesh from inside of the dragon fruit until you have about 1/2 cup of fruit.
Place the fruit in a shallow saucepan set to med. high heat. Add the lime juice, water and sugar. While the compote is heating, mash the fruit gently with a fork and stir frequently.
As the mixture reaches the boiling point, the compote will begin to thicken slightly. Continue to stir for an additional minute and remove from heat.
To serve, spoon the compote over the vanilla cake. Serve with additional pieces of dragon fruit and other fruit such as papya, if desired.
