ami g's pumpkin cake

This cake is perfect for Fall football and tailgate parties. It's my friend Ami's special cake and we are all disappointed if she doesn't bring it!!! For tailgating we use a 13/9 pan--easy to carry and cut up!

Ingredients For ami g's pumpkin cake

  • 1 box
    yellow cake mix
  • 1 pkg
    instant butterscotch pudding
  • 4
    eggs
  • 1/4 c
    water
  • 1C
    canned pumpkin
  • 2 tsp
    pumpkin pie spice
  • 1/4 c
    oil
  • 1 c
    chocolate chips
  • 1/2 c
    chopped pecans (more if prefer)

How To Make ami g's pumpkin cake

    Preheat oven to 350 degrees. Spray bundt pan with baking spray (note--you can also use a 13x9" pan if you prefer, greased)

    Mix all ingredients except chocolate chips and pecans with mixer, and mix until blended. Fold in chocolate chips and nuts. Pour into prepared pan

    Bake 13x9" pan 40-45 minutes; bundt pan 33-36 minutes. NOTE depending upon your oven, time will vary. Once it tests done, its done! Cool in pan 15 minutes, then on wire rack until completely cool

    Make a glaze of confectionary sugar, vanilla, and milk (add slowly so it isn't real runny). OR you can just "frost" with Cool whip. Either way, sprinkle with nuts
