I found this recipe online. Since it sounded so good, I decided to try it. My husband and I liked it!

3 c
all-purpose flour
2 tsp
ground cinnamon
1 tsp
baking soda
dash(es)
salt
2 c
sugar
1 c
oil
1/2 Tbsp
imitation vanilla
3 large
eggs
2 large
bananas, mashed
1 c
crushed pineapple, drained
3/4 c
coconut
1 c
toasted walnuts or macadamia nuts,coarsely chopped

CREAM CHEESE FROSTING

8 oz
cream cheese, softened
1 stick
butter, softened
4 c
powdered sugar
1/2 Tbsp
imitation vanilla
1/4 c
coconut

Directions Step-By-Step

Preheat oven to 350 degrees. Spray 10-12 cup Bundt pan with cooking spray with flour. In medium bowl, whisk flour, cinnamon, baking soda and salt; set aside. In large mixing bowl, beat sugar, oil and vanilla until combined. Add eggs one at a time; beat until fluffy about 3-4 minutes. Gradually, beat in flour mixture. Add bananas, pineapple and coconut: beating just until combined. Stir in nuts. Pour batter into prepared pan and smooth top with spatula. Bake about 1 hour or until toothpick inserted near the center comes out clean. Cool on wire rack for 15 minutes and invert cake onto rack. Cool completely.

Frosting:

Beat cream cheese and butter until smooth Gradually, add powdered sugar. Add vanilla. Frost cake. Sprinkle coconut on top of cake. Store in refrigerator.
