1/2 colive oil

1/2 csugar

4eggs, at room temperature

1/2 tspvanilla

1/2 tspalmond extract

1/4 csoy milk

1 1/4 calmond flour

1/2 cwhole wheat pastry flour

1/2 tspbaking powder

1/4 tspbaking soda

1 cdried apricot soaked in hot water for 10 minutes, make sure you pad it dry before adding to the batter
- FOR THE GLAZE

1 cpowdered sugar

1/2 tspvanilla

2-4 Tbspwater
-
chopped dry apricots, optional
How To Make almond and apricot cake

1Preheat oven to 350F. Grease and flour a 9 inch round baking pan. You can use a 8 inch if you have one. I think it will look prettier, I just don't have it. In a bowl, with a wire whisk, mix first 7 ingredients. Add the rest of the ingredients and incorporate well.

2Pour batter onto the prepared baking pan and bake for 40-45 minutes or until a cake tester inserted in the middle comes out clean. After about 20-30 minutes remove cake for the baking pan and cool completely before glazing.

3For the glaze. Mix all of the ingredients, except apricots, and pour over cooled cake. Sprinkle the apricots over the top and serve.
