Chocolate Covered Cherry Cupcakes

1 Box Devils Food Cake Mix

1/2 cup Hershey's Special Dark Unsweetened Cocoa Powder

3 eggs

2 teaspoons pure vanilla extract

1 cup sour cream (full fat)
•
3/4 cup vegetable oil
•
2/3 cup tart cherry juice
•
GANACHE
•
4 oz Semi-Sweet or Bittersweet Chocolate, finely chopped (60% cacao is good)

5 oz (1/2 cup, plus 2 Tablespoons) heavy whipping cream
•
CHERRY BUTTERCREAM;
•
1 cup tart cherry juice, reduced to 1/3 cut
•
1 1/2 cups unsalted butter, room temperature'
•
3 cups powdered sugar
•
1 Tablespoon meringue powder
•
1.2 teaspoon vanilla
•
3-4 tablespoons milk
•
GARNISHES:
•
marachino cherries
•
sprinkles or sparkling sugar

Bake:
