sweet potato pancakes (my way)

Had some leftover sweet potatoes , so decided to make pancakes with them, turned out real good

Ingredients For sweet potato pancakes (my way)

  • 2 c
    flour
  • 1/2 c
    sugar
  • 1 tsp
    baking powder
  • 1 tsp
    cinnamon
  • 1/4 tsp
    freshly grated nutmeg
  • 1 c
    mashed sweet potatoes
  • 2 Tbsp
    melted butter
  • 1 lg
    egg
  • 1 can
    evapoated milk

How To Make sweet potato pancakes (my way)

    In large bowl combine flour, sugar, baking powder, cinnamon, and nutmeg, I whisk it so it is blended,

    In a small bowl mash the sweet potato and melted butter together.

    In the dry ingredients make a well in the middle add 1 egg and the mashed sweet potatoes, pour in condensed milk combine with whisk .

    In heavy pan I used spray, but you can use any oil you like, add batter 1/2 cup per pancake turning once till both sides are brown.
