Pancakes With Lingonberries (Sweden)

- 1 c
- sifted flour
- 2 Tbsp
- granulated sugar
- 1/4 tsp
- eggs, beaten
- 3 c
- 1/3 c
- lingonberry preserves
1Sift flour, sugar and salt together.
2Add eggs and milk gradually. Stir until thoroughly mixed. Let stand 1 to 2 hours.
3Heat a griddle, skillet or tempered Swedish pancake pan. Brush well with butter.
4Spread hot cake batter thin. Brown on each side.
5Roll hot cakes.
6Serve with lingonberry preserves.
