1Zest and juice the 2 lemons....add to a bowl along with the flour, eggs, ricotta cheese, baking soda and salt/

2whisk in milk, until combined well and the consistency of a smooth batter.

3let sit for a few minutes, while you heat up a non-stick pan, add a touch of butter and pour about a half cup of batter...cook about a minute, until bubbles start to form, then turn over with spatula and cook another minute or 2.
