to make strawberry sauce, in medium sauce pan combine cleaned and sliced strawberries, cornstarch, lemon zest and juice,1/4 c sweetner, and water. bring to slow boil stirring to mix all ingredients. allow to thicken and then set aside.
combine remaining ingredients and wisk mixing throughly, dip slices of bread allowing to absorb some of the mixture, fry pieces in a pan coated with cooking spray until golden brown on both sides, keep warm in 200 degree oven until all pieces are fried. when plating I suggest placing two pieces on plate and spreading strawberry mixture on top, serve warm.
we like this french toast because it tastes decadent, but is relatively low in calories.
