You may need to add more sugar if the berries are not very sweet.
The framer's market had raspberries,I'm surprised to see them this late,but they looked good so I bought some for the pancakes we'll serve on Sunday.
You can use the same recipe to make strawberry or any other berry syrup.Raspberry is my family's favorite.
- 3 1/2 c fresh raspberries
- 3 c water
- 1 c sugar
when it starts boiling, turn down the heat to a simmer
Skim off any foam and let it simmer for 20 minutes
Turn off the heat and strain it through a fine mesh strainer.
Reheat the juices to a simmer and add in the sugar
Stir occasionally until all the sugar has dissolved.
Let syrup cool to room temperature and bottle it
Store in the refrigerator.
