Kids love food that has eye appeal, especially if it looks fun. My girls are no different. I've made these pancakes in 6 rainbow colours. By doing this, I have enough for a meal for the kids and can freeze the rest so they can start their day with a rainbow anytime they like. In order to get the vibrant colours, be sure to add your food colouring to the water before you add the water to your favourite pancake mix. This also ensures that your pancake mix stays bubbly for nice, fluffy pancakes.

Serve 2-3 pancakes per child. Remainder of pancakes freeze really well once cooled, then you can start your kid(s)' day with a rainbow anytime. You can thaw pancakes in frige overnight or quickly in a microwave. When freezing pancakes, layer them with parchment paper so they are easily separated.
