Ingredients

1 c quinoa
2 c water
6 pitted dates, chopped
1 handful walnuts chopped
1/4 tsp cinnamon (or to taste)
1 tsp agave syrup (or to taste)
milk
Pinched by tbucci, and 58 more.

I love Quinoa. I've seen and made a lot of Quinoa salads, but did you know you can make it for breakfast too? It's a great alternative to oatmeal. I used chopped dates and walnuts in mine but any combination of dried or fresh fruit with nuts would work well. Who knew healthy food could be so delicious!!!!!

 

Directions

In medium sized saucepan, bring 2 cups of water to a boil.

Add 1 Cup Quinoa, stir, return to boil and then lower to a simmer and cover.

Cook for 5 minutes then add the dates and nuts.

Cover and cook for another 10-15 minutes until the Quinoa has soaked up all the water.

Place desired amount of Quinoa in bowl and add cinnamon, agave syrup and milk to taste. Put the rest in the frig for another day. Enjoy.

I've also made this with diced apple and craisins...yum.

Carol, if you're a fan of quinoa, give it a try. I really like it as an alternative to oatmeal (which I love too). And it stays really well in the frig for a few days too.
