Ingredients For pumpkin chocolate chip muffins

  • 1 1/2 c
    whole wheat flour
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2/3 c
    sugar
  • 1 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 1/4 tsp
    ground ginger
  • 1
    egg
  • 1 c
    pumpkin puree
  • 2/3 c
    applesauce, unsweetened
  • 1 Tbsp
    plus 1 teaspoon canola oil
  • 1 tsp
    vanilla extract
  • 2/3 c
    chocolate chips

How To Make pumpkin chocolate chip muffins

    Preheat oven to 350.
  • 2
    Prepare a 12 cup muffin tin with nonstick spray or liners.

    In a large bowl, combine the flour, baking soda, baking powder, salt, sugar, cinnamon, nutmeg and ginger. Whisk until combined.

    In a separate bowl, mix together egg, pumpkin, apple sauce, oil and vanilla until well combined.

    Combine the wet and dry ingredients and mix until just combined (be careful not to over mix). Fold in chocolate chips.

    Scoop the batter into the prepared muffin tins. Bake for 15-18 minutes.

    If you insert a toothpick it should come out clean. Remove from muffin tin and cool on a wire rack.
