Grandma would save the mashed potatoes from the night before and make these patties like hashbrowns or pancakes, my kids loved them.

1use your leftover mashed potatoes, add egg,enough milk to make it soft enough to form patties. And salt and pepper to taste.
2Heat skillet add oil to fry up the patties, doesn't need very much.
Form patties and place in hot skillet. Brown on each side. Serve hot and enjoy.
