Ingredients

2 c
bisquick baking mix
2
eggs
1 c
milk
1 tsp
vanilla extract
4 c
lightly buttered and salted popped popcorn
maple syrup, butter, and additional popcorn

Step-By-Step

1In a large bowl, whisk together bisquick, milk, eggs and vanilla until smooth. Stir in popcorn. Spray a large skillet with non-stick cooking spray, and heat over medium high heat. Spoon 1/4 cup batter into skillet, and cook for
2-3 minutes or until top of pancake is covered with bubbles, and edges are dry. Flip and cook 2-3 minutes more or until cooked through. Repeat. Serve with maple syrup, butter and popcorn. Makes 3-4 servings.
