So...I know you only clicked this because its so uniquely interesting that the title caught your eye...GOOD! This is probably the greatest recipe I have ever came up with. Sadly when I looked online, It had already been done. But the bright side was it was not the way I had thought of doing it. So this is my Custom recipe, My Pride and Joy. Ingredients For pina colada pancakes

  • 2 c
    bisquick mix
  • 2
    eggs
  • 1 c
    coconut milk (sweetend)
  • 1 pinch
    cinnamon
  • 1/3 c
    toasted shredded coconut
  • FOR THE STICKY PINEAPPLE GLAZE
  • 1 c
    diced pineapple (size is up to you)
  • 1 cup c
    pineapple juice or canned pineapple liquid
  • 1 c
    lemon, juiced
  • 1/4 c
    sugar
  • 2 Tbsp
    water
  • 2 Tbsp
    cornstarch

How To Make pina colada pancakes

    Step 1.) Mix together Bisquick, Coconut milk, Cinnamon and eggs into a large Mixing bowl until thoroughly combined.

    Step 2.) Fold in Cooled Toasted Coconut.

    Step 3.) Take 1/2 cup of batter and Fry on a griddle, 3 mins on each side. (Or until bubbles form around edges

    Step 4.) Roughly chop the pineapple(Pineapple should still be slightly large, Uniformity does not matter.) Transfer to small saucepan add Pineapple, Pineapple juice and sugar. Dissolve cornstarch in the water in a small bowl. Add to the saucepan. when mixture has come to a simmer.

    Step 5.) Cook over medium heat, stirring constantly until glaze comes to a boil and thickens (May need to let reduce for 3-5 mins). Cool thoroughly. and Serve quite warm over your Coconut Pancakes!
