OKAY. I'll just put it out there: before today I never made a waffle! I love to bake and cook but waffles just seemed like SO much trouble. My Hubs adores waffles. So, inspired by all the great recipes on JAP, I did the unthinkable; bought a Belgian waffle maker! Now, which recipe to try? Lots of premium recipes to chose from but I am a simple cook. I love to start with a basic recipe and add complimentary ingredients as I go along. My husband calls me the "add in queen". I wanted a light, cake-like waffle with subtle nuances of flavors. "Do I taste pecans?". This is what I ended up with.

Ingredients For perfectly simple cake-like waffles

  • 1 1/2 c
    cake flour (may use ap)
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1
    egg, room temperature
  • !/4 c
    sugar, may use more according to how sweet you want your waffle baked cakes to be!
  • 2 Tbsp
    butter, softened
  • 2 Tbsp
    shortening, butter flavor
  • 1/2 c
    half and half, room temperature
  • 1/4 c
    buttermilk, room temperature
  • 1/2 c
    milk, room temperature
  • 1 tsp
    vanilla extract
  • 1 tsp
    butter flavoring
  • 1/2 tsp
    almond extract
  • 1/2 c
    finely crushed pecan pieces (i used fisher's naturals pecan cookie pieces)

How To Make perfectly simple cake-like waffles

    In medium bowl, combine flour, baking soda, and salt. Stir well to combine. Set aside.

    Lightly beat egg in medium mixing bowl. Cream in sugar with electric mixer. Add shortening and butter; mix until smooth. Add half and half, buttermilk, milk, and vanilla extract, butter flavoring and almond extract. Mix well.

    Add dry ingredients slowly into wet ingredients while slowly beating. Mix only briefly. It's okay for lumps to remain. You do not want to overbeat. Fold in pecan pieces; mix in lightly.

    Chill your batter @ least several hours. I put mine in fridge overnight to be ready for next morning. You want batter to rest and thicken a bit. At waffle time, leave batter out of fridge while heating waffle maker. Use maker according to maker's instructions.

    When waffle maker is ready, pour 1/3 to 1/2 cup (according to size of waffle plates) of batter into maker and cook according to manufacturer instructions or until waffles are at preferred doneness and color. Remove carefully from maker. Enjoy while hot!

    Serving suggestion: use your favorite topping. Check out JAP for different butters, sauces and serving ideas. The extracts and flavoring lend a cake like taste to the waffles and pecans add a ever so soft crunch and distinctive flavor. We ate them NAKED; loaded with butter. Next time I will add some fresh fruit but truthfully these waffles don't need anything else. I was reluctant to post this recipe due to the sheer simplicity. Simple waffles filled with scrumptiousness from a simple cook. Hope you will enjoy!
