1Beat the eggs in a separate bowl. Combine sour cream and baking soda with a whisk, then stir in the eggs.
2Combine flour, sugar, baking powder, and salt in a separate bowl. Stir into sour cream mix. Add butter and mix well. Add milk and beat until well blended.
3Spray a non-stick frying pan with cooking spray. Pour about 1/4 cup of batter to make 3 pancakes in the pan. As dough begins to set, add any desired toppings.
4When you begin to see bubbles pop in the middle of the pancake, flip it over and cook on the other side for about a minute. Use a spatula to slide finished pancakes onto a plate. Continue until all batter has been used up. Serve pancakes with your favorite topping. I like butter and real maple syrup!

I have substituted self-rising flour in place of the all purpose flour, salt, and baking powder, and this recipe has turned out just fine. I have made this recipe several times with both kindergarten and second grade students, allowing each student to add an ingredient, and several to mix the ingredients together. My girl scouts can also successfully make this recipe!

great pancakes! Thanks for the recipe. My 2yr old woke up this morning asking for pancakes as she had watched a cartoon show about pancakes last night, had no mix so I found your recipe and made them. I don't even like regular pancakes and loved these!
