Ingredients For peanut butter and fruit quinoa, diabetic

  • 2 c
    water
  • 1 c
    quinoa
  • 1/4 c
    apple juice, unsweetened
  • 3 Tbsp
    natural creamy peanut butter
  • 1 sm
    banana, chopped
  • 2 Tbsp
    no added sugar raspberry or strawberry jam
  • 4 tsp
    chopped, unsalted, blanched hazelnuts or peanuts

    In a medium saucepan combine the water and quinoa. Bring to boiling; reduce heat to medium-low. Cook, covered, for 10 to 15 minutes or until water is absorbed.

    Remove from heat. Add apple juice and peanut butter, stirring until combined. Stir in banana.

    Divide mixture among four bowls. Add a spoonful of of the jam to each serving and top with nuts.
