Here's a warm and hearty breakfast that is perfect for a busy morning. All of the prep is done the night before, so in the morning you just stir, plate and serve. To create this, I started with a popular recipe, but tweaked it to our taste. This yummy oatmeal is so warm and hearty. The flavors of the apple, cinnamon, and ginger are sure to please your tastebuds! If your kids love raisins, throw a few of them in also!

Ingredients For overnight apple spice oatmeal

  • some
    butter for greasing crock
  • DRY INGREDIENTS:
  • 1 c
    steel cut oats (no substitutions)
  • 2 tsp
    ground cinnamon
  • 1 1/2 to 2 tsp
    crystallized ginger, finely minced
  • 1/8 tsp
    freshly grated nutmeg
  • 3 Tbsp
    dark brown sugar, packed
  • 1 Tbsp
    white sugar
  • 1/4 tsp
    salt
  • WET INGREDIENTS:
  • 2 Tbsp
    salted butter
  • 4 c
    water (or 2 c. water & 2 c. apple juice)
  • 1 tsp
    pure vanilla extract
  • 2 c
    peeled, tart apples such as granny smith, chopped chunky
  • TO SERVE:
  • some
    milk/cream and extra sugar (optional)

How To Make overnight apple spice oatmeal

    **NOTE: This quantity of oatmeal is perfect for up to 4 servings and will cook well in a slow cooker that is no more than 5 quarts. If you only have a large slow cooker, you may double the recipe, or you may improvise by using a stoneware casserole dish set inside the slow cooker insert (see photos.) Begin this recipe about 30-45 minutes before bedtime.

    Gather and prep ingredients. Use butter to grease slow cooker insert/dish.

    In a small mixing bowl, combine dry ingredients; pour into dish/insert of slow cooker.

    Add wet ingredients; stir well.

    If using a casserole dish inside the slow cooker, cover the casserole dish with a glass lid or aluminum foil (mold the foil down and around the dish to hold in as much steam as possible,) then place lid on slow cooker. If using only the cooker insert, place lid on cooker.

    Set slow cooker on low heat to cook overnight. (Oatmeal will be ready to eat in as soon as 4 hours, but it can stay in the slow cooker for up to 10 hours.)

    In the morning, remove lid, stir well and use a large spoon or ladle to fill bowls. Serve with milk/cream and sugar on the side, if desired. Tranfer any leftover to a covered container and refrigerate.
