Long - time southwesterners, we like just about anything wrapped in a tortilla. I expecially like this one pan idea taught to me by one of my friends from south of the border. Also like the yogurt topping twist.
Use a 12 inch frying pan for this recipe ( I prefer stainless steel) combine beans and chilies in frying pan, stirring often, heat until hot.
Combine beaten eggs, onion, 3 T. of the salsa and chopped cilantro.
push beans to one side of the pan. pour eggs into cleared area and stir often until scrambled. 3-4 minutes
meanwhile, warm tortillas. Spoon mixture evenly in the center of the tortillas. Serve, seam side down, on warm plates. Place a bit of the yogurt across the middle of ewach burrito. Serve additional yogurt and salsa on the side. Garnish with a wedge of the small limes, and sprig of cilantro
