Ingredients

2 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 1/4 cups sugar
1 cup vegetable oil
3 eggs, lightly beaten
2 tsp. vanilla extract
2 cups grated carrots
1 granny smith apple, peeled and chopped
1/2 cup raisins
1/2 cup shredded coconut
1/2 cup chopped pecans

Directions Step-By-Step

Preheat oven to 350. Mix flour, baking soda, cinnamon and salt together. Mix sugar, oil, eggs, vanilla, carrots, apple, raisins, coconut and pecans in a bowl. Mix well. Add flour mixture and mix just until moistened. Fill greased and floured or paper lined muffin cups two thirds full. Bake for 15 to 20 minutes or until muffins test done. Cool in pan for 2 minutes. Remove to a wire rack. Makes 2 dozen muffins.
