ANNE's Notes:

These are the best pancakes I have ever tried! Easy to whip up as long as you have the buttermilk on hand. You can add sliced bananas, blueberries, whatever... I add the fruit after I've dropped the pancake batter in the pan so fruit is evenly distributed throughout each pancake.

Directions

1
Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl.
2
Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small to medium lumps.
3
I drop mine in a 12" skillet pan using a 1/3 cup measuring cup. That fits 3 pancakes at once. It makes about 20 pancakes this size.
4
If using fruit, I drop the 3 pancakes and then spread the fruit out on each. Turn when the top is covered with bubbles and is browning nicely.

These freeze very nicely, and you just need to microwave till hot when you get a hankering for them! I usually eat 3, as do my kids. My husband eats 4-5.

These were absolutely delicious. I had two sick kids home from school, made these and I think they instantly felt better. This will be my go to recipe for buttermilk pancakes.

These were lovely! I halved the recipe (just me and my daughter) and added apples. Yum!
