hot pastrami breakfast stack
(1 rating)
Sometimes I get bored with breakfast, so this is one of my "get out of the rut" recipes. It's a breakfast stack made with a hot, and crispy, hash brown potato patty, topped with warm, thin slices of peppery pastrami, melty cheddar and Italian cheese, an "over easy" fried egg, more cheese, bacon and chives. It's delightfully different and delicious, and it would be a great breakfast-in-bed for your Valentine!

How To Make hot pastrami breakfast stack
-
1Gather and prep ingredients; preheat toaster oven.
-
2Bake hash brown patty according to package instructions for toaster oven (mine says 400 degrees F for 22 minutes.)
-
3In the last couple of minutes before hash brown patty is finished baking, melt butter in a medium nonstick skillet over medium-low heat. Individually fold pastrami slices in half and place in skillet to warm.
-
4When hash brown patty is finished baking, place warmed pastrami on top, sprinkle with 1/2 of the cheeses and 1/2 of the bacon bits; return patty to oven.
-
5Crack egg, pour into prepared skillet; cook over medium/medium-high heat for 1 1/2 minutes; using egg turner, flip egg over, cook for 30 seconds; remove from heat.
-
6Immediately remove hash brown patty from oven and place on serving plate.
-
7Slide fried egg onto patty; sprinkle with salt and/or pepper to taste.
-
8Sprinkle with remaining cheese, bacon bits and chives. Garnish as desired; serve immediately.
