Homemade Breakfast Crunch Wraps

I saw something like this on a commercial for Taco Bell & thought the idea was great. Handheld breakfast with a crispy outside. ( I don't eat at Taco Bell for obvious reasons.) So I decided to make my own. I know the corn sounds kinds weird, but the sweetness goes very well with the savory-ness of the bacon & egg mixture.

It may seem like a lot of steps, but you can do a lot of these things at the same time, so it really is quick to make. I hope you try it!

Ingredients

6
extra large eggs
4 slice
bacon, cooked & crumbled
1/2
onion, diced
1/2
green bell pepper, diced
5 slice
velveeta singles
5 large
flour tortillas
1 c
frozen corn
2 Tbsp
butter

Step-By-Step

1Mix eggs with 2 tablespoons of water, set aside.

2Saute butter, corn, onions & peppers in a large skillet over med high heat for 2-3 minutes.

3Add egg mixture & bacon.

4Add egg mixture & lower heat to medium.
Slowly fold the veggies into eggs while they cook. When they look almost done, I pull them off the heat & cover.

5Heat another large skillet to medium, sprayed with cooking spray.
Heat tortillas in microwave for 15 seconds, for easier folding.

6Place your cheese in the center of the tortilla.
Add a large spoonful of egg mixture on top of the cheese.
***Add more cheese if desired. ***

7Fold tortilla in over mixture 5 times (will look like a pentagram.)

Step 8 Direction Photo

8Put into skillet folded side down & cook until nicely browned, crispy & sealed(3-5 min.)
Turn & repeat.

9Serve with your choice of salsa, other condiments, or just plain.
