Greek pita pizzas w/ spinach & feta

1 tsp
olive oil
thinly sliced scallions
2 tsp
minced garlic
1/4 tsp
dried oregano
10 oz pkg frozen, chopped spinach, thawed, squeezed dry
1/3 c
crumbled, reduced-fat feta cheese.
1/4 c
snipped fresh dill
whole wheat naan flatbreads
1 c
halved cherry tomatoes.
3/4 c
reduced-fat, shredded mozzarella cheese.

Directions Step-By-Step

Heat oven to 425. Heat oil in lg skillet over medium heat. Add scallions. Cook, stirring until softened. Stir in garlic and oregano, stir 1 min. Stir in spinach and cook until heated through, 2 min. Remove skillet from heat and stir in feta cheese and dill. Spray a baking sheet w/ cooking spray and place NANN on sheet. Top each NAAN evenly with spinach mix. Sprinkle evenly w/ tomatoes and bake until NAAN are crisp on bottom, about 10 mins. Sprinkle each NAAN evenly w/ mozzarella cheese and bake until cheese begins to soften, 3 mins. Cut each pizza in 1/2.
