Saute pico de gallo till tender. Whish 4 eggs together in small bowl. Spray 8" non stick skillet with non stick spray, pour egg in, place lid on top, cook over med low heat, as egg starts to solidify, gently lift up sides and let runny egg run underneath of omelet. Repeat this till all liquid egg is off top of omelet. Then gently flip omelet over, add pico de gallo and american cheese to ONE half of omelet. Flip half of the omelet over on top of the other side. Place grated cheese on top.
