Buttermilk Pancakes- Mrs. Batterberry

This recipe is from Sister/Aunt Viola 7/14/1976 who got it from "Mrs. Fire News" submitted by Mrs. Kenneth Batterberry 4/1967.

This is the only pancake recipe I use since 1976. They are so light and fluffy!

Ingredients

1 qt
buttermilk
2 tsp
salt
6 Tbsp
sugar
6
eggs, slightly beaten w/fork
3 tsp
rounded, baking powder
2 tsp
rounded, baking soda
4 c
flour, or a bit more
4 Tbsp
butter, melted
1 tsp
vanilla

Directions Step-By-Step

First whisk dry ingredients together. Make a "well"; add remaining ingredients.

Beat really hard ( or use electric mixer). Batter may be made night before. Will keep "a couple of days" in refrigerator.

Use 1/4 cup or 1/3 cup batter per pancake. Don't need to grease griddle, but you may prefer to lightly grease it.
