Kimberly's StoryThis is a recipe for delicious buttermilk pancakes that I found in a Gooseberry Patch cookbook (Homestyle Family Favorites).
*For a buttermilk substitute, mix 1 tablespoon of lemon juice or vinegar into 1 cup of milk (I used lemon juice).

buttermilk* (see my notes)
1Combine the first 5 ingredients in a large bowl; set aside.
2Beat together eggs, butttermilk, oil and vanilla in a mixing bowl; stir into flour mixture just until moistened.
3Pour batter by 1/4 cupfuls onto a greased hot griddle; turn pancakes when bubbles appear on the surface; cook until golden.

I made these just now....the batter was really really thick. I had to add an extra cup or so more milk, to get the batter to work properly.
I also substituted melted butter for oil, but they were really tasty
