Before you start frying mix --have a bowl of sugar and cinnamon shaker beside.-- In a large frying pan melt 2 tablespoons crisco shortening (or more) as takes quite a bit. Using a large spoon fill with pancake mix and drop into hot grease, spread as thin as you can and when edges start to crisp turn over and brown the other side. Place on large plate and sprinkle with sugar and cinnamon. Repeat this until all of the pancake mix is used up. Then cut as you would a cake.
