Better for you buttermilk pancakes
In a large bowl,combine the first 5 ingredients. Combine the egg whites, egg, buttermilk,snf oil. Stir into dry ingredients just until moistened.
Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles just form on top, cook until second side is golden brown. Top with blueberries if desired.
You can freeze extra pancakes in a single layer on a baking sheet, then transfer to a freezer bag when ready. Pop in microwave or toaster.
