Mix flour, sugar, baking powder, baking soda, and salt.
Add buttermilk, melted butter, vanilla, and eggs. Mix until just combined- lumps are good! Don't make the mixture super smooth or the pancakes will be tough.
Melt a good amount of butter on a pan, or preferably a griddle. Measure about a quarter cup of pancake batter onto hot pan. (We use a soup ladle)
Cook until golden, plate up, and serve with extra butter and maple syrup, or strawberries and whipped cream, or maybe some honey and toasted nuts: the possibilities are endless!
