Love the baked potato taste in the morning.

From now on, you're going to make sure you have extra baked potatoes so you can make this breakfast skillet. We used ham in the Test Kitchen, but any leftover meat will be great. This is a great recipe for using up holiday leftovers too. We loved the combination of peppers, onion, and spices. Serve this skillet alongside eggs and you have an easy-to-make hearty breakfast.

Ingredients For baked potato breakfast skillet

  • 4
    potatoes
  • 1 c
    meat - bacon, ham, leftover ribs or pork
  • 1/2 c
    green pepper
  • 1/2 c
    onion
  • 1 Tbsp
    oil
  • 1 Tbsp
    butter
  • 1 tsp
    garlic powder
  • 1 tsp
    season salt
  • 1/8 tsp
    pepper
  • 1 c
    shredded cheese

How To Make baked potato breakfast skillet

  • Cooked and cooled baked potatoes.

    The night before, bake 4 potatoes, let cool and put in refrigerator until morning.
  • Sauteeing diced potatoes in seasonings, onions, and peppers.

    Peel and dice potatoes. Add oil and butter to the skillet. Then add potatoes, onion, peppers, and spices. Saute for 10 minutes on medium-low.
  • Ham added to the skillet with the potatoes.

    Add meat and saute for 15 minutes or until hot.
  • Cheese sprinkled into the skillet.

    Add cheese and turn burner off for 5 minutes. *My cooking isn't always the necessary way lol. You don't need both oil and butter, I just like to fry and saute that way.
