I always want something sweet for breakfast, but I dont want the calories. this is my solution. and you can make the batter ahead of time.

Ingredients For baked oatmeal cups

1/2 ccanned pumpkin

1 lgapples, golden delicious, chopped

1 csplenda for baking, brown

2 tsppure vanilla extract

1 pinchsalt
-
2 cdry oats
-
2 tsppumpkin pie spice

1 lgegg
-
1 1/2 calmond milk, unsweetened
How To Make baked oatmeal cups

1preheat oven to 350 degrees, line muffin pan with liners or spray with non-stick spray

2combine all wet ingredients in seperate (larger) bowl, combine dry ingredients

3add wet ingredients to dry ingredients, then add chopped apple, mix well . store in fridge overnight if not ready to bake.

4fill muffin tins pretty much all the way (these dont really rise). and bake approximately 15-20 minutes or until toothpick inserted comes out clean. you can pretty much enjoy these right away.
