This recipe is from Hungry Girl 300 under 300 by Lisa Lillien. It serves one but it is so much it doesn't all fit in my cereal bowls. I have made it twice and have struggled to eat it all both times!

Ingredients For apple pie oatmeal bonanza (6 pts)

  • 1/2 c
    old fashioned oats
  • 1/2 c
    apple, chopped
  • 1 Tbsp
    sugar free pancake syrup
  • 1 tsp
    fat free non-dairy creamer
  • 1/2 tsp
    cinnamon, or to taste
  • 1/2 tsp
    vanilla extract
  • dash
    salt
  • 2
    no calorie sweetener packets
  • 1 c
    unsweetened vanilla almond breeze

How To Make apple pie oatmeal bonanza (6 pts)

    Combine all ingredients in a nonstick pot on the stove. Add 1 cup water and mix well. Bring to a boil, and then reduce to a simmer

    Cook for 12 to 15 minutes, stirring frequently, until very thick and creamy.

    Transfer to a bowl, allow to slightly cool and thicken, and then dig in!
