Ingredients

1/2 lb lean ground beef
1/4 c diced onion
1/4 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp garlic powder
1 bay leaf
1/2 c rotel diced tomatoes and green chilies
1 Tbsp olive oil, extra virgin
1 c raw diced potatoe
1 tsp minced garlic
salt and pepper to taste
1/2 c beef stock

Deborah's Notes:

Growing up in Texas where cattle is raised, ground beef is the most affordable cut of meat. My family learned many different ways to stretch out our meal. This recipe is a wonderful blend of ground beef, onions, and potatoes.

 

Directions

In a medium heated skillet add olive oil, onions, and garlic. Saute until slightly translucent. add beef stock, potatoes/bay leaf turn heat to low and simmer for 5 minutes.

Stir in ground beef; cook over medium heat until brown. add coriander, cumin, garlic powder, and rotel tomatoes. cook for 10 mins or when the potatoes are completely tender not mushy. Remove bay leaf.

Warm up tortilla, add filling, and serve.

Hi Deborah, This looks and sound good. Do you take out the bay leaf or crushed it up.

I can not wait to try this one too. I was wishing for an Abuelita to show me how to make the Mexican food of my youth. You are no where close to being a grandmother but you have the know how. Wishes do come true. Do you make tamales as well? Lol, thank you so much for sharing.

I made this for our noon meal today. I must say that you have made my hubby a very happy man. The tacos were sooo very good. Really easy to make too. We are diabetic so I have to be really careful with our carb counts so I did not include the potatoes because of this and added some Mexican chorizo because of taking out the potatoes. I used your suggested spices and amounts. This is a keeper. Thank you for bringing a little South Texas home to Seattle.
