It took some experimenting, but I finally came up with a tasty, healthy way to replace sausage or bacon. Breakfast is a very important meal; but for those who have to watch sodium intake, it can be a difficult meal to prepare. The challenge is to have something flavorful without salt. Cereal and oatmeal get boring day after day. Also, cooking breakfast takes time that we don't always want to give up in the morning. This recipe addresses these "problems" with breakfast. Just prepare ahead and microwave while you are getting ready for work. Yummy!

These breakfast patties are a terrific "foundation" recipe that can be easily peppered with different seasonings and flavors as your mood dictates. Ground flax seed acts as a binder and adds tons of fiber. They are a great low-sodium, low-carb, and low-fat alternative to breakfast sausage.

Ingredients For breakfast patties

  • 1 lb
    ground turkey or chicken (for this recipe I prefer turkey)
  • 1 md
    onion, diced
  • 1 lg
    egg
  • 1/2-3/4 c
    ground flaxseed
  • fresh ground pepper (2-3 twists of the pepper mill)
  • 1 Tbsp
    blend of dried oregano, basil, marjoram, thyme, and garlic powder
  • 2-3 pinch
    crushed red pepper

For the seasonings, we read it as a total of 1 Tbsp not a Tbsp of each spice.
  • Breakfast patty ingredients in a bowl.

    In a bowl mix together all ingredients; adding enough ground flaxseed to be able to handle the mixture.
  • Mixture formed into patties.

    Form into patties about the size of a sausage patty.
  • Browning the patties in a skillet.

    Place in non-stick skillet and brown on both sides. Serve with fruit and milk or coffee.

    NOTE: You can use any seasonings desired; such as sage for a more traditional sausage flavor.
