breakfast cheddar muffins

Whether it’s in the middle of Winter, or the heat of Summer, the smell of these muffins baking is enough to get the sleepiest person out of bed and headed to the kitchen. The ingredients can be assembled the night before, and then popped into the oven the next morning. Add a sausage patty, and/or some eggs, and you have a complete breakfast that your guests will love you for. So, you ready… Let’s get into the kitchen.

Ingredients For breakfast cheddar muffins

  • PLAN/PURCHASE
  • 1 1/4 c
    flour, all purpose variety (non self-rising)
  • 3/4 tsp
    baking powder
  • 1/8 tsp
    baking soda
  • 1/4
    salt, kosher variety
  • 1/2 c
    cheddar cheese, shredded
  • 2 Tbsp
    sweet butter, unsalted
  • 2 Tbsp
    grapeseed oil
  • 2 Tbsp
    coconut sugar
  • 1 lg
    egg, whipped
  • 1/2 c
    fresh buttermilk
  • 2 Tbsp
    sour cream
  • ADDITIONALS
  • additional shredded cheese for garnish
  • sausage patties, or your favorite breakfast meat
  • eggs, cooked the way you like them
  • assorted mustards

How To Make breakfast cheddar muffins

    PREP/PREPARE

    Gather your ingredients.
  • 3
    Place a rack in the middle position, and preheat the oven to 385 (195c).

    Add the flour, baking powder and soda, salt and cheddar to a large bowl.
  • 5
    In a second bowl add the oil, and then whisk in the melted butter.
  • 6
    Add the sugar, and whisk until combined.
  • 7
    Add the egg, and whisk.
  • 8
    Add buttermilk, and sour cream, and whisk.

    Add the mixture to the dry ingredients, and gently mix.

    Chef’s Tip: Gently mix until the ingredients are combined, and then stop… do not over mix.

    Add a muffin tins, or in my case small spring form pans… fill to about 50 percent.

    Add some more cheese on top.

    Place in the preheated oven for 20 minutes, or until the cheese on top begins to nicely bubble and brown.

    Remove from the oven, and allow them to rest for 5 minutes.

    Cut each muffin in half.

    Add a sausage patty.

    Add some eggs.

    Chef’s Tip: These are a bit dry, so if serving by themselves, include some butter and honey. If you are serving with sausage and egg, then include an assortment of good mustards.
