I watched the food channel one day and Ina (Barefoot Contessa) was cooking bacon. I was surprised to see that the bacon was cooked in the oven. Well, I didn't want my oven trashed by cooking bacon in the oven, so I just saved the recipe just in case. Then in another show a few weeks later, there was Paula Dean, cooking bacon in the oven. So I decided to try it out. Paula Dean said this is the only way to cook bacon, and after I tried it I was hooked. No mess(except the cookie sheet)and the bacon was just perfect. Crisp (bake as crisp as you like it), even browning, does not curl up, and flavored just how you like it. Most of all no mess in the oven, as I expected. No mess with bacon grease all over the stove, and no splatters in the face. Why didn't I learn to cook bacon this way? I need to remember to cook the bacon this way. I always for get. Ingredients For bacon, bacon, who has the bacon

  • INA'S MAPLE- ROASTED
  • 3/4 lb
    thick cut bacon (or the amount that you need)
  • 1 to 2 Tbsp
    good maple syrup (i used mrs. butterworths)
  • PAUL DEANS BROWN SUGAR BACON
  • 1/4 c
    packed brown sugar
  • 2 tsp
    chili powder ( i omitted this)
  • 8 slice
    thick cut bacon (or amount you need)
  • EVERYDAY BACON
  • 8 slice
    thick cut bacon

    Preheat oven to 400 degrees. Line a cookie sheet with aluminum foil. If you are cooking a lot of bacon: Crimp edges a little taller to keep bacon grease from spilling out when you remove pan from oven. Set a cooling rack inside the prepared pan. Spray rack with Pam for easier cleaning.

    Brown Sugar: In a shallow dish, combine the brown sugar and chili powder (Opt). Dredge the bacon slices in the brown sugar and arrange the bacon, in one layer, on the rack. Bake in preheated oven until crisp, about 20 minutes, or until it is how you like your bacon cooked. I cooked the bacon for 10 minutes and turned and baked for 10 more minutes. Remove from oven. Careful, there will be hot grease in the pan!

    Maple-roasted: Arrange bacon in one layer on baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. Remove pan from oven:Careful, there will be hot grease in the pan. Brush the bacon slices with maple syrup and bake for another 3 to 5 minutes, until the bacon is a warm golden brown. Remove from oven.

    Regular bacon: bake as above, add course ground pepper if desired.

    Transfer the bacon to a plate lined with paper towels and serve warm. My husband says that the bacon is done when the smoke alarm goes off. He likes it very crispy.
