Pancake Almondine

I eat pancakes every once in a while and when I do I make them like this. I like the fruit and nut in the pancake with a hint of almond and vanilla. I am tempted to use spices here, but it would just take away from the plain batter taste that tastes good when you drink ice cold milk.

Notes from the Test Kitchen:
This pancake recipe is a great way to start the day. These pancakes have a slight almond taste which I loved. Chewy raisins and crunchy almonds are a great addition. I can't wait to make these again!

Ingredients

1/2 c
pancake mix
1 Tbsp
sliced almonds toasted
1 Tbsp
dried raisins
1
drop almond extract
1
drop vanilla
pam cooking spray
1 tsp
butter
3 Tbsp
maple syrup
approximately 1/4 water

Step-By-Step

1Mix water in pancake mix. Make sure it's not too thick or runny.
2Add almond extract and vanilla; mix.
3Add toasted almonds and raisins; mix.
4Heat up a cast iron skillet with Pam cooking spray.
5Cook until golden brown, about a minute on each side.
6Heat maple syrup in microwave and pour over the pancakes topped with butter.
7Serve with an ice chilled cup of milk. Enjoy!
