Mexican Breakfast Galette

This recipe makes a fast, filling and healthy breakfast. It's gently sweet, even though it has no added sugar. You can make it in the evening and it keeps perfectly overnight, or you can make it in the morning since it's so quick and easy.

Ingredients

1 c
whole grain pancake or baking mix
1/4 c
milk
4
small apples
1 c
grated cheddar cheese
1/4 c
walnut pieces

Step-By-Step

1Mix pancake mix and milk in a bowl
2Use your hands to knead the mix and form a ball. Use dry pancake mix to reduce stickiness
3Sprinkle pancake mix on a baking sheet, then roll out the dough into a 1/4 inch circle
4Core the apples, then slice very thin. Use a food processor if possible
5Mix together the apples, cheese and walnuts. You can use the bowl you used for the dough
6Heap the mixture on the dough, then fold over the edges to form a galette
7If desired, brush milk onto the crust edges to improve browning. You can use your fingers
8Bake for 20 minutes
